2 T Dijon mustard
2 T balsamic vinegar
1/3 c e.v olive

salt and pepper to taste

In blender, mustard and vinegar, blend on low.  Slowly drizzle in oil until smooth.  Adjust seasonings.

Possible add ins?-roasted garlic (to taste) blended with the mustard and vinegar.  1 large bunch of fresh Thai basil into the mustard/vinegar.  1 cup fresh baby spinach in the mustard, vinegar.
